Collard seeds

Collard seed. Collards may be considered a Southern thing but if you have only tasted them out of a can, you are missing out on a wonderfully tasty and healthy green. As with turnip greens, tear the leaves from the stems for the most tender parts.
 Not only do collards withstand some frost, the frost actually seems to improve the taste.
 Seed can be started, 1/4 inch deep, 8-10 weeks prior to the last frost and set out 4 weeks before the last frost but the Fall and Winter seasons are what we prefer. The pictured collard below has seen 18 degrees F and is invited, along with its neighbors, to join us for lunch on New Years Day. Another favorite in the square foot beds at one plant per square.
